Hungarian Goulash (Gulyásleves)

Hungarian Goulash, traditionally known as Gulyás, is one of Hungary’s most famous comfort foods. This hearty, paprika-rich dish combines tender beef, potatoes, carrots, onions, and aromatic spices in a deeply flavorful broth.

Ingredients

  • 2 lb beef chuck, cut into bite-sized pieces
  • 2 tablespoons vegetable oil or lard
  • 2 large onions, finely chopped
  • 2 tablespoons sweet Hungarian paprika
  • 3 cloves garlic, minced
  • 2 tomatoes, chopped
  • 1 green bell pepper, chopped
  • 4 medium potatoes, peeled and cubed
  • 2 carrots, sliced
  • 1 parsnip, sliced
  • 1 teaspoon caraway seeds
  • 1 teaspoon marjoram
  • 6 cups beef broth or water
  • Salt and black pepper, to taste
  • 1 bay leaf
  • Fresh parsley, for serving
