
Somlói Galuska is one of Hungary’s most beloved traditional desserts. This luxurious layered sweet combines pieces of soft sponge cake with vanilla custard, chocolate sauce, rum-soaked raisins, walnuts, and plenty of whipped cream.
Despite its name, Galuska means “dumpling,” but this dessert is not made from dumpling dough. Instead, it is spooned into portions from layers of cake and cream, creating a wonderfully rustic presentation. Each bite brings together soft sponge, creamy custard, crunchy walnuts, rich chocolate, and fluffy whipped cream.
Ingredients
For the Sponge Cake
- 6 large eggs
- ¾ cup (150 g) granulated sugar
- 1 cup (125 g) all-purpose flour
- 1 teaspoon vanilla extract
- 1 tablespoon unsweetened cocoa powder
- Pinch of salt
For the Vanilla Custard
- 2 cups (480 ml) milk
- 4 large egg yolks
- ½ cup (100 g) granulated sugar
- 2 tablespoons all-purpose flour or cornstarch
- 1 teaspoon vanilla extract
For the Chocolate Sauce
- ½ cup (100 g) granulated sugar
- 2 tablespoons unsweetened cocoa powder
- ½ cup (120 ml) water
- 3 oz (85 g) dark chocolate
- 1 tablespoon butter
For the Filling
- ½ cup (75 g) raisins
- ⅓ cup (80 ml) rum, or orange juice for a non-alcoholic version
- ¾ cup (90 g) chopped walnuts
- 2 tablespoons granulated sugar
For the Whipped Cream
- 1 ½ cups (360 ml) heavy whipping cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
