Hungarian Goulash (Gulyás)

Instructions

  1. Heat the lard or oil in a large pot. Add the onions and cook until soft and lightly golden.
  2. Remove the pot from the heat and stir in the paprika and caraway seeds.
  3. Add the beef, garlic, tomatoes, and bell pepper. Stir well to coat the meat.
  4. Return to low heat and pour in enough broth to cover the beef. Add the bay leaves, salt, and pepper.
  5. Cover and simmer gently for 1½–2 hours, until the beef is tender.
  6. Add the carrots, parsnip, and potatoes.
  7. Continue simmering for 30–40 minutes, until the vegetables are tender.
  8. Remove the bay leaves and adjust the seasoning.
  9. Garnish with fresh parsley and serve hot with crusty bread.
