Instructions

  1. Heat the oil or lard in a large pot. Add the onion and cook until soft and lightly golden.
  2. Remove the pot from the heat and stir in the Hungarian paprika and caraway seeds.
  3. Add the garlic, bell pepper, and tomato. Stir well.
  4. Add the potatoes and sliced sausage. Season with salt and black pepper.
  5. Pour in the water or broth. The liquid should come about halfway up the potatoes.
  6. Cover and simmer over medium-low heat for 25–35 minutes, until the potatoes are tender.
  7. Stir occasionally and add a little more water if needed.
  8. Taste and adjust the seasoning.
  9. Garnish with fresh parsley and serve hot with crusty bread or pickles.
