
Instructions
- Heat the oil or lard in a large pot. Add the onion and cook until soft and lightly golden.
- Remove the pot from the heat and stir in the Hungarian paprika and caraway seeds.
- Add the garlic, bell pepper, and tomato. Stir well.
- Add the potatoes and sliced sausage. Season with salt and black pepper.
- Pour in the water or broth. The liquid should come about halfway up the potatoes.
- Cover and simmer over medium-low heat for 25–35 minutes, until the potatoes are tender.
- Stir occasionally and add a little more water if needed.
- Taste and adjust the seasoning.
- Garnish with fresh parsley and serve hot with crusty bread or pickles.
