
Instructions
- Heat the oil in a large pot over medium heat. Add the onion and cook for 4–5 minutes until softened.
- Remove the pot briefly from the heat and stir in the paprika and garlic. This helps prevent the paprika from burning.
- Add the potatoes, carrot, celery, caraway seeds, and bay leaf.
- Pour in the broth and season with salt and pepper.
- Bring to a boil, then reduce the heat and simmer for 20–25 minutes, until the potatoes are tender.
- In a small bowl, whisk together the sour cream, flour, and water until smooth.
- Slowly stir a little hot soup into the sour cream mixture, then pour it back into the pot while stirring.
- Simmer for another 3–5 minutes until slightly thickened.
- Remove the bay leaf, adjust the seasoning, and garnish with fresh parsley.
- Serve hot with an extra spoonful of sour cream and crusty bread. 🇭🇺❤️
