Instructions

  1. Heat the oil in a large pot over medium heat. Add the onion and cook for 4–5 minutes until softened.
  2. Remove the pot briefly from the heat and stir in the paprika and garlic. This helps prevent the paprika from burning.
  3. Add the potatoes, carrot, celery, caraway seeds, and bay leaf.
  4. Pour in the broth and season with salt and pepper.
  5. Bring to a boil, then reduce the heat and simmer for 20–25 minutes, until the potatoes are tender.
  6. In a small bowl, whisk together the sour cream, flour, and water until smooth.
  7. Slowly stir a little hot soup into the sour cream mixture, then pour it back into the pot while stirring.
  8. Simmer for another 3–5 minutes until slightly thickened.
  9. Remove the bay leaf, adjust the seasoning, and garnish with fresh parsley.
  10. Serve hot with an extra spoonful of sour cream and crusty bread. 🇭🇺❤️
