
Instructions
- Make the batter: In a large bowl, whisk together the eggs, milk, water, sugar, salt, and vanilla.
- Gradually add the flour while whisking until the batter is smooth and fairly thin.
- Stir in the melted butter or oil. Let the batter rest for about 15–20 minutes.
- Heat the pan: Place a nonstick skillet over medium heat and lightly grease it.
- Pour a small ladleful of batter into the pan. Quickly tilt and rotate the pan so the batter spreads into a very thin, even layer.
- Cook for about 1–2 minutes, until the edges begin to lift and the underside is lightly golden.
- Flip and cook the other side for about 30–60 seconds.
- Repeat with the remaining batter, lightly greasing the pan as needed.
Traditional Filling Ideas
For a sweet Hungarian-style serving, spread the pancakes with:
- Apricot or strawberry jam
- Cinnamon sugar
- Cocoa and sugar
- Sweetened cottage cheese
- Ground walnuts mixed with sugar
- Chocolate-hazelnut spread
Roll the filled pancakes into cylinders or fold them into quarters. Dust with powdered sugar before serving.
Tips for Perfect Palacsinta
Keep the batter thin. The batter should flow easily around the pan. If it seems too thick, add a little milk or water.
Rest the batter. A short resting period helps produce smoother, more tender pancakes.
Use medium heat. Too much heat can brown the pancakes before they cook evenly.
Make them very thin. The hallmark of palacsinta is its delicate, crepe-like texture.
