
Instructions
- Heat the lard or oil in a large heavy pot. Add the onions and cook slowly until soft and golden.
- Remove the pot from the heat and stir in the Hungarian paprika and caraway seeds.
- Add the beef and stir until well coated with the onion and paprika mixture.
- Add garlic, tomato, bell pepper, salt, pepper, and bay leaf.
- Pour in the beef broth or water. The liquid should only partially cover the meat.
- Cover and simmer gently for 1½–2 hours, stirring occasionally, until the beef is very tender.
- Add a little water during cooking if the sauce becomes too dry.
- Remove the bay leaf and adjust the seasoning.
- Serve hot with dumplings, egg noodles, potatoes, or fresh crusty bread.
