Hungarian Beef Pörkölt

Instructions

  1. Heat the lard or oil in a large heavy pot. Add the onions and cook slowly until soft and golden.
  2. Remove the pot from the heat and stir in the Hungarian paprika and caraway seeds.
  3. Add the beef and stir until well coated with the onion and paprika mixture.
  4. Add garlic, tomato, bell pepper, salt, pepper, and bay leaf.
  5. Pour in the beef broth or water. The liquid should only partially cover the meat.
  6. Cover and simmer gently for 1½–2 hours, stirring occasionally, until the beef is very tender.
  7. Add a little water during cooking if the sauce becomes too dry.
  8. Remove the bay leaf and adjust the seasoning.
  9. Serve hot with dumplings, egg noodles, potatoes, or fresh crusty bread.
