Hungarian Gerbeaud Cake (Zserbó Szelet)

Instructions

Mix the warm milk with the yeast and a teaspoon of sugar. Let stand for 5–10 minutes.

Combine the flour, remaining sugar, and salt. Add the butter, egg yolks, vanilla, and yeast mixture. Knead gently until a smooth dough forms.

Divide the dough into 3 equal portions and chill for about 30 minutes.

Mix the ground walnuts with the sugar.

Roll out the first portion of dough and place it in a parchment-lined baking pan. Spread with half of the apricot jam and sprinkle with half of the walnut mixture.

Add the second layer of dough, followed by the remaining jam and walnuts. Cover with the final sheet of dough.

Prick the top with a fork and bake at 350°F (175°C) for 30–40 minutes, until lightly golden.

Allow the cake to cool completely.

Melt the chocolate with the butter and cream until smooth. Spread over the cooled cake and allow the topping to set.

Cut into neat squares or rectangles and serve.

Tips for Perfect Zserbó

  • Use thick apricot jam so the layers don’t become soggy.
  • Don’t overwork the dough.
  • Let the cake cool completely before adding the chocolate.
  • For cleaner slices, chill the finished cake briefly before cutting.
  • Letting the cake rest before serving allows the flavors and layers to come together beautifully.
