
Instructions
1. Prepare the Pancake Batter
In a large bowl, whisk together the eggs, milk, water, salt, and oil. Gradually add the flour, whisking until you have a smooth, thin batter.
Let the batter rest for about 15 minutes.
Heat a lightly greased nonstick skillet over medium heat. Pour in a small amount of batter and swirl the pan to create a thin pancake.
Cook for about 1 minute per side, then transfer to a plate. Continue until all the batter is used.
2. Make the Meat Filling
Heat the oil in a skillet over medium heat. Add the chopped onion and cook until softened.
Add the beef, paprika, salt, and pepper. Cook until the meat is fully cooked and well seasoned.
Add the beef broth and simmer for several minutes until the mixture is flavorful and moist but not watery.
Remove from the heat and allow the filling to cool slightly.
3. Fill the Pancakes
Place a spoonful of the meat filling in the center of each pancake.
Fold the sides inward and roll or fold the pancake into a neat parcel. Place the filled pancakes seam-side down in a baking dish.
4. Prepare the Paprika Sauce
In a bowl, whisk together the sour cream, broth, flour, paprika, and a little salt.
Pour the sauce over the stuffed pancakes, making sure they are generously covered.
5. Bake
Place the dish in a preheated 350°F (175°C) oven and bake for about 15–20 minutes, until hot and bubbling.
6. Serve
Transfer the pancakes to serving plates and spoon some of the creamy paprika sauce over the top.
Finish with a dollop of sour cream and freshly chopped parsley.
